Why Lamb?
At Simon Sheep Farms, lamb isn’t just what we raise—it’s what we believe in. With over a century of shepherding tradition, we’ve seen firsthand the value of this incredible animal, both on the plate and on the land.
A Meat That Stands Apart
Lamb offers a rich, tender flavor that’s both distinctive and incredibly versatile. Whether grilled, slow-roasted, or ground into burgers, it’s a protein that elevates any meal. Unlike more common meats, lamb is naturally nutrient-dense—packed with essential vitamins and minerals like iron, zinc, and vitamin B12. It’s also an excellent source of healthy fats, including omega-3s, especially when pasture-raised like ours.
For those looking to eat more mindfully, lamb is often easier to digest than beef and pork, and it fits well into Mediterranean, paleo, and whole-food diets.
Raised Differently. Raised Better.
What truly sets our lamb apart is how we raise them—from birth to harvest—right here on the land we’ve stewarded for over 100 years. At the heart of our operation is our Infinity Pasture System: a year-round, barley sprout operation designed to provide fresh, living green grass every single day, even through the harsh winter.
Unlike most stock animals that rely heavily on stored feed or drylot systems, our lambs graze on greens throughout the seasons. This not only gives them a healthier, more natural lifestyle, but it also leads to cleaner, more flavorful meat with better marbling and nutritional value.
Healthy grass = healthy sheep = better lamb for your family.
Why Sheep Make Sense
Raising sheep has unique advantages that benefit both the land and the animals themselves:
Gentler on the Environment: Sheep require less feed, water, and land than cattle, making them a more sustainable choice for small farms and conscious consumers. Their lighter hooves are easier on pastureland and cause less erosion.
Natural Grazers: Sheep are excellent at managing weeds and improving soil health through rotational grazing. They work with the land, not against it.
Lower Input, Higher Return: Compared to other livestock, sheep are efficient converters of forage into high-quality protein. They thrive on pasture and don’t require grain-heavy diets.
Multi-Purpose Value: In addition to delicious meat, sheep provide wool and other by-products, helping reduce waste and support full-circle farming.
Taste What Care Tastes Like
Our lambs are born and raised here on the farm, handled with care from day one. We believe that raising animals with respect, on fresh greens, produces food that’s better for the land, better for the animal—and better for your table.
No added hormones. No added stress. Just clean, honest lamb, raised the way nature intended.
